He began his career as an apprentice at La Trinquette in Grandcamp-Maisy, followed by Le Relais Louis XIII in Paris, whose chef Manuel Martinez was awarded two Michelin stars. He later worked in Lyon with Philippe Gauvreau, another Michelin-starred chef who took him to Dubai to open new restaurants, before returning to his roots with a spell at the Château de la Chenevière in Commes.
In 2014, Thomas was appointed Maître Restaurateur. This guarantees that only fresh, local produce is used and that all the dishes are home-made!
